Originating from the Rhône-Alpes region of France, this cheese is crafted from raw cow’s milk and carries a fascinating history dating back to the time of the Dauphins of the Dauphiné. Encased in a fine white rind, Saint-Marcellin is a versatile cheese perfect for cheese boards or warm culinary creations.
History:
The history of Saint-Marcellin is tied to the Dauphiné region, where it was favored by Louis XI, the future King of France. According to legend, the Dauphin, cornered by a bear in a forest, was rescued by two woodcutters who offered him this cheese from their valley. So impressed by its flavor, Louis XI rewarded them with titles of nobility—though the promised fortunes accompanying the titles never arrived. Today, Saint-Marcellin remains a cherished part of French cheese culture.
Fabrication:
Saint-Marcellin is made from raw cow’s milk. The curd, formed after renneting, is ladled into molds to drain gently. After an initial salting and turning, the cheese is dried for 24 hours or more before entering the ripening phase. This maturation process lasts between two weeks to a month, allowing the cheese to develop its tender texture and distinctive flavor.
