As the winemaker calls it - Methode Non Traditionelle. This undisgorged bubbles are made from vintage still base wines and secondary fermentation in the bottle is started by adding a fresh juice from the last vintage. Pinot Gris 2021 was made orange and Pesecká Leánka 2021 was macerated 3 days on skins; both aged 10 months in old oak barrels. There is also a dash (about 5%) of late harvest Pinot Gris from 2020 aged 24 months in barrel, then carefully blending with the fresh juice of Pesecká Leánka 2022. 

The result is elegant, creamy and layered, with exciting tertiary tones and surprising flavours popping on the palate. The volcanic character is undeniable: it's spicy, temperamental and with no posturing, just like the people and vineyards of the region where this wine is born.
