Sirloin is cut from the loin — the area behind the ribs and before the rump. It strikes the ideal balance between flavour and tenderness. It has more flavour than fillet due to its outer fat layer, and is more tender than rump due to its position on the animal. The thin fat cap bastes the meat as it cooks, giving it a naturally juicy finish.
Bring to room temperature for 30 minutes. Season generously with sea salt. Sear in a very hot cast iron pan with beef dripping — 2-3 minutes per side for medium-rare on a 300g steak. Stand the steak on its fat cap briefly to render it down. Rest for at least 5 minutes before serving.
The 32 day sirloin is the benchmark — clean, rich and deeply satisfying. The 45 day adds noticeably more intensity and complexity as the dry-ageing concentrates the flavour further. Both come from the same native British cattle — the ageing period is the only difference.
