Sashi Finnish Ayrshire beef is produced exclusively from pasture-raised Ayrshire heifers in Finland as part of the Freygaard range. Ayrshire is a traditional dairy breed known for producing meat with fine, consistent marbling and a clean, full flavour when reared on grass. The Sashi range won Gold at the World Steak Challenge in both 2018 and 2019 for Best Grass-Fed Steak.
We offer the Prime Cut (bone-in prime rib — the best steak on the bone), Bone-In Sirloin and Porterhouse. All are from the same award-winning Finnish Ayrshire herd. Select your preferred cut from the dropdown when ordering.
Bring to room temperature for 45-60 minutes. Season generously with sea salt only — the clean, natural flavour needs nothing else. Sear in a very hot cast iron pan — 3-4 minutes per side for medium-rare on a bone-in prime rib. Rest for at least 8 minutes before carving. The fine marbling renders beautifully and self-bastes the meat throughout.
